Ingredients
¾ cup unsalted butter, softened
1 cup brown sugar
¼ cup molasses
1 large egg
1 tsp vanilla extract
2¼ cups gluten-free 1:1 flour (with xanthan gum)
2 tsp baking soda
1½ tsp ground ginger
1 tsp ground cinnamon
¼ tsp ground cloves
¼ tsp salt
¼ cup granulated sugar (for rolling)
Instructions
1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
2. In a large bowl, cream butter and brown sugar until light and fluffy.
3. Beat in molasses, egg, and vanilla until smooth.
4. In a separate bowl, whisk gluten-free flour, baking soda, ginger, cinnamon, cloves, and salt.
5. Add dry ingredients to wet ingredients and mix until combined.
6. Scoop dough into balls and roll each in granulated sugar.
7. Place cookies on baking sheet, spacing evenly.
8. Bake 9–11 minutes until edges are set and tops are crackled.
9. Cool on baking sheet for 5 minutes, then transfer to a wire rack.
Notes
Do not overbake — cookies should stay soft in the center.
Chill dough 20 minutes if cookies spread too much.
Cookies stay chewy for days when stored airtight.
