🍰 For the Biscuits:

2 cups gluten-free all-purpose flour (with xanthan gum)

1 tbsp baking powder

1/4 tsp baking soda

1/4 tsp salt

2 tbsp granulated sugar

1/2 cup cold unsalted butter, cut into cubes

3/4 cup buttermilk (or use milk + 1 tsp lemon juice)

1 tsp vanilla extract

🍓 For the Strawberries:

1 lb fresh strawberries, hulled and sliced

23 tbsp granulated sugar

1 tsp lemon juice

🥄 For the Whipped Cream:

1 cup heavy cream

2 tbsp powdered sugar

1/2 tsp vanilla extract

Instructions

1. In a medium bowl, toss sliced strawberries with sugar and lemon juice. Set aside to macerate at room temperature (about 30 minutes).

2. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.

3. In a large bowl, whisk together flour, baking powder, baking soda, salt, and sugar.

4. Cut in the cold butter using a pastry cutter or your fingers until pea-sized crumbs form.

5. Mix buttermilk and vanilla together. Add to dry ingredients and stir until dough just comes together.

6. Turn dough onto a floured surface. Pat into a 1-inch thick round. Cut into 6 biscuits using a biscuit cutter or glass.

7. Place biscuits on baking sheet and bake 13–15 minutes or until golden.

8. Let biscuits cool slightly on a rack.

9. Meanwhile, whip cream, powdered sugar, and vanilla until soft peaks form.

10. To serve: Slice biscuits in half. Spoon strawberries over the bottom half, top with whipped cream, and cover with biscuit top. Add more cream and berries if desired.

Notes

Make dairy-free by using plant-based butter and coconut cream.

Best enjoyed the day it’s made but biscuits can be frozen and reheated.

Use other berries like blueberries or raspberries for a twist!
