Ingredients
2 pounds bone-in or boneless chicken thighs or breasts
3–4 cups baby potatoes, halved
1 small onion, sliced
4 cloves garlic, minced
1/3 cup lemon juice (fresh)
Zest of 1 lemon
1/4 cup olive oil
1/2 cup chicken broth
1 teaspoon dried oregano
1 teaspoon dried thyme
1/2 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon black pepper
Fresh parsley for serving
Optional: olives or feta for topping
Instructions
1. Place potatoes and sliced onion at the bottom of the slow cooker.
2. Place chicken on top of the vegetables.
3. In a small bowl, whisk together lemon juice, lemon zest, olive oil, chicken broth, oregano, thyme, garlic powder, salt, and pepper.
4. Pour the lemon herb mixture over the chicken.
5. Cover and cook on LOW for 6–7 hours or on HIGH for 3–4 hours, until chicken is tender and potatoes are soft.
6. Taste and adjust seasoning with extra lemon or salt if needed.
7. Serve hot, sprinkled with fresh parsley, olives, or feta if desired.
Notes
Add a little rosemary for deeper Greek flavor.
For a thicker sauce, remove the lid in the last 30 minutes.
Serve with rice, orzo, or a Greek salad for a complete meal.
