1 lb ground beef

1 tbsp olive oil (if needed)

1/2 onion, diced

2 cloves garlic, minced

1 tbsp taco seasoning (or mix of chili powder, cumin, paprika)

Salt and pepper to taste

**For the cilantro rice:**

1 cup long-grain white rice

2 cups water or broth

1 tbsp lime juice

1/4 cup chopped fresh cilantro

Salt to taste

**Toppings (optional):**

1/2 cup canned black beans, drained and rinsed

1/2 cup corn kernels (fresh, frozen, or canned)

1/2 cup diced tomatoes or salsa

1/2 avocado, sliced

1/4 cup shredded cheese

Sour cream, hot sauce, or lime wedges for garnish

Instructions

1. In a pot, bring rice and water (or broth) to a boil. Reduce heat, cover, and simmer 15 minutes or until fluffy. Stir in lime juice, cilantro, and a pinch of salt. Set aside.

2. In a skillet over medium heat, cook ground beef until mostly browned. Drain excess fat if needed.

3. Add onion, garlic, taco seasoning, and a splash of water. Cook 5–7 minutes, stirring, until beef is fully cooked and flavorful.

4. Assemble bowls: Start with cilantro rice, top with seasoned ground beef, beans, corn, tomatoes or salsa, avocado, cheese, and any extras.

5. Serve immediately with lime wedges or store components separately for meal prep.
