Ingredients
1 prepared pizza crust (store-bought or homemade)
1/2 cup BBQ sauce
1 cup cooked chicken breast, shredded or diced
1/2 cup canned pineapple chunks, drained
1/3 cup red onion, thinly sliced
1 1/2 cups shredded mozzarella cheese
1/4 cup chopped fresh cilantro (optional)
1 tbsp olive oil (for brushing crust)
Pinch of red pepper flakes (optional)
Instructions
1. Preheat oven to 450°F (232°C). If using a pizza stone, place it in the oven to heat.
2. Brush pizza crust lightly with olive oil and place on a baking sheet or pizza peel.
3. Spread BBQ sauce evenly over the crust.
4. Top with half of the cheese, then layer chicken, pineapple, and red onion.
5. Sprinkle remaining cheese evenly over the toppings.
6. Bake for 10–13 minutes or until the crust is golden and the cheese is bubbly.
7. Remove from oven and let cool slightly.
8. Top with fresh cilantro and a pinch of red pepper flakes if desired.
9. Slice and serve hot.
Notes
Use smoked gouda or cheddar along with mozzarella for a flavor boost.
Rotisserie chicken works perfectly for a shortcut.
Make it vegetarian by skipping the chicken and adding extra veggies like bell peppers.
