Ingredients
1 lb lean ground beef or ground turkey
1 tbsp olive oil
1 small onion, diced
2 cloves garlic, minced
3 bell peppers, chopped
1 can (14.5 oz) diced tomatoes
2 tbsp tomato paste
1 tsp paprika
1 tsp Italian seasoning
1/2 tsp cumin
Salt and black pepper, to taste
1 cup cooked rice or cauliflower rice
1/2 cup shredded mozzarella or cheddar cheese (optional)
Instructions
1. Heat olive oil in a large skillet over medium heat.
2. Add onion and cook until softened, then stir in garlic.
3. Add ground meat and cook until browned, breaking it up as it cooks.
4. Stir in chopped bell peppers and cook for 3–4 minutes until slightly tender.
5. Add diced tomatoes, tomato paste, and all seasonings.
6. Simmer for 8–10 minutes until thick and flavorful.
7. Stir in cooked rice or cauliflower rice until well combined.
8. Taste and adjust seasoning as needed.
9. Sprinkle with cheese if using and let melt before serving.
Notes
• Use cauliflower rice for a low-carb option.
• Great for meal prep—keeps well for up to 4 days.
• Add chili flakes for extra heat.
