Ingredients
6 boneless, skinless chicken thighs
1/3 cup honey
1/4 cup low-sodium soy sauce (gluten-free if needed)
1 tbsp apple cider vinegar
1 tbsp ketchup
4 cloves garlic, minced
1 tsp ground ginger
1/2 tsp black pepper
1 tbsp cornstarch + 2 tbsp water (optional, for thickening)
Sesame seeds and chopped green onions for garnish
Instructions
1. Whisk together honey, soy sauce, vinegar, ketchup, garlic, ginger, and black pepper in a small bowl.
2. Place chicken thighs in the slow cooker and pour sauce over the top.
3. Cover and cook on LOW for 5–6 hours or HIGH for 3–4 hours, until chicken is very tender.
4. Optional: Remove chicken and transfer sauce to a small pot. Stir in cornstarch slurry and simmer 3–5 minutes to thicken, then pour back over chicken.
5. Serve over rice or steamed veggies. Garnish with sesame seeds and green onions.
Notes
Use bone-in thighs if preferred—just add 30 minutes to cook time.
Double the sauce for extra to spoon over rice.
Refrigerates well for up to 4 days and freezes beautifully.
