Ingredients

2 cups almond flour
1/4 tsp baking soda
Pinch of salt
1/4 cup coconut oil or unsalted butter, melted
1/4 cup maple syrup or honey
1 egg
1 tsp vanilla extract
1 tbsp orange zest
1 tbsp fresh orange juice

1/2 cup powdered sugar
1β2 tbsp fresh orange juice
1/2 tsp orange zest (optional for extra flavor)
Instructions
1. Preheat oven to 350Β°F (175Β°C) and line a baking sheet with parchment paper.
2. In a medium bowl, whisk almond flour, baking soda, and salt.
3. In another bowl, whisk together melted oil or butter, maple syrup, egg, vanilla, orange zest, and orange juice until smooth.
4. Combine wet and dry ingredients and mix until a dough forms.
5. Scoop tablespoon-sized portions onto the baking sheet and flatten slightly.
6. Bake for 10β12 minutes or until edges are lightly golden. Cool completely.
7. In a small bowl, whisk powdered sugar with orange juice until smooth and pourable.
8. Drizzle or spoon glaze over cooled cookies. Let set before serving.
Notes
Store cookies in an airtight container at room temperature for 3 days or refrigerate for up to 1 week.
Make dairy-free by using coconut oil.
Use blood orange juice for a fun twist.
