Ingredients
For the Bread:
2 cups mashed potatoes (cooled)
2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
2 tablespoons butter, melted
1/2 cup buttermilk
Optional:
Extra butter for serving
Instructions
1. Preheat oven to 200°C (400°F) and line a baking tray.
2. In a bowl, mix mashed potatoes, flour, baking powder, baking soda, and salt.
3. Add melted butter and buttermilk.
4. Mix until a soft dough forms.
5. Turn dough onto a floured surface and gently shape into a round.
6. Place on baking tray and score a cross on top.
7. Bake for 25–30 minutes until golden and cooked through.
8. Let cool slightly before slicing.
9. Serve warm with butter.
Notes
Do not overwork the dough to keep it soft.
Use leftover mashed potatoes for convenience.
Serve fresh for best taste.
