Ingredients

1 cup heavy cream

1/2 cup light corn syrup

1/8 tsp salt

1/2 tsp vanilla extract

Instructions

1. In a heavy saucepan over medium heat, combine sugar, cream, corn syrup, and salt.

2. Stir constantly until sugar dissolves. Clip a candy thermometer to the pot.

3. Without stirring, cook until mixture reaches 260°F (hard-ball stage).

4. Remove from heat and stir in vanilla.

5. Pour onto a buttered marble slab or greased baking sheet.

6. Let candy cool until just warm but still pliable.

7. Butter your hands and pull the candy repeatedly until it turns pearly and opaque (about 10 minutes).

8. Stretch into ropes, cut into pieces, and let sit at room temperature until firm.

9. Store in an airtight container in wax paper layers.

Humidity affects results—best made on dry, cool days.

Work fast once cooled to pulling stage—it firms quickly!

For a twist, add peppermint or maple extract to the vanilla.
