Ingredients
2 bunches collard greens, stems removed and chopped
2 tbsp olive oil or bacon grease
1 small onion, diced
4 cloves garlic, minced
1 tsp smoked paprika
1/2 tsp red pepper flakes (adjust to taste)
1/2 tsp black pepper
1/2 tsp salt
3 cups chicken or vegetable broth
1 tbsp apple cider vinegar
Optional add-ins:
Smoked turkey leg or ham hock
Hot sauce
Instructions
1. Wash collard greens thoroughly and chop into bite-size pieces.
2. Heat olive oil or bacon grease in a large pot over medium heat.
3. Add onion and sauté until softened, then stir in garlic.
4. Add smoked paprika, red pepper flakes, black pepper, and salt.
5. Stir in collard greens and toss until slightly wilted.
6. Pour in broth and add smoked turkey or ham hock if using.
7. Bring to a gentle simmer, cover, and cook for 45–60 minutes until greens are tender.
8. Stir in apple cider vinegar and adjust seasoning.
9. Remove meat, shred if needed, and return to the pot.
10. Serve hot with a splash of hot sauce if desired.
Notes
• Low and slow cooking gives the best flavor.
• Vinegar brightens and balances the richness.
• Even better the next day.
