Loaded Cajun Seafood Stuffed Potatoes | Spicy & Delicious Cajun Recipe

Ingredients

4 large russet potatoes, scrubbed

1/2 lb shrimp, peeled and deveined

1/2 cup lump crab meat (or imitation crab)

2 tbsp olive oil

2 tsp Cajun seasoning (divided)

1/2 tsp garlic powder

2 tbsp butter

1/2 cup heavy cream

1 cup shredded cheddar cheese

1/2 cup sour cream

2 green onions, sliced (for garnish)

Salt and pepper to taste

Instructions

1. Preheat oven to 400°F (200°C). Prick potatoes with a fork, place on baking sheet, and bake for 50–60 minutes until tender.

2. While potatoes bake, season shrimp with 1 tsp Cajun seasoning and garlic powder. Heat olive oil in a skillet over medium heat and cook shrimp until pink, about 3–4 minutes. Stir in crab and cook another 1–2 minutes. Set aside.

3. In a saucepan, melt butter. Stir in cream, remaining Cajun seasoning, salt, and pepper. Add cheddar cheese and whisk until smooth. Remove from heat.

4. When potatoes are done, let cool slightly. Slice open and scoop out some flesh into a bowl. Mix with sour cream and half the cheese sauce.

5. Stuff potato shells with shrimp, crab, and cheesy potato mixture. Drizzle with remaining sauce.

6. Top with green onions and serve hot.

Notes

For extra spice, add cayenne or diced jalapeños to the cheese sauce.

You can use crawfish tails instead of shrimp for an authentic Southern twist.
