Ingredients
For the Macaron Shells:
1 cup almond flour
1 cup powdered sugar
2 egg whites
1/4 cup granulated sugar
1/2 teaspoon vanilla extract
For the Goat Cheese Filling:
150g goat cheese, softened
2 tablespoons honey
1 tablespoon heavy cream
Optional:
Fresh herbs (like thyme)
Cracked black pepper for garnish
Instructions
1. Preheat oven to 150°C (300°F) and line a baking tray.
2. Sift almond flour and powdered sugar together.
3. In a bowl, beat egg whites until soft peaks form.
4. Gradually add granulated sugar and beat until stiff peaks form.
5. Gently fold dry ingredients into the meringue.
6. Pipe small circles onto the baking tray.
7. Let rest for 30 minutes until a skin forms.
8. Bake for 12–15 minutes, then let cool completely.
9. Mix goat cheese, honey, and cream until smooth.
10. Pipe filling onto half the shells and sandwich with remaining shells.
11. Optional: garnish with herbs or pepper.
Notes
Do not overmix batter to keep proper texture.
Let macarons rest before baking for smooth tops.
Store in the fridge and bring to room temperature before serving.
Experiment with flavors like fig or lemon zest.
