Ingredients

1 tablespoon Dijon mustard
2 tablespoons olive oil

Instructions
1. Preheat oven to 200°C (400°F).
2. In a bowl, whisk maple syrup, Dijon mustard, olive oil, salt, and pepper.
3. Add vegetables and toss until well coated.
4. Spread evenly on a baking sheet.
5. Roast for 25–30 minutes until tender and caramelized.
6. Stir halfway through for even cooking.
7. Garnish with thyme or sesame seeds and serve warm.
