Ingredients
2 cups mashed potatoes (cold or room temperature)
1 large egg
1/2 cup shredded cheddar cheese
1/4 cup grated Parmesan cheese
2 tablespoons chopped green onions or chives
1/4 teaspoon garlic powder
Salt and pepper, to taste
1/4 cup all-purpose flour (or more as needed)
1 tablespoon oil or butter, for greasing muffin tin
Instructions
1. Preheat oven to 400°F (200°C). Lightly grease a mini muffin tin with oil or butter.
2. In a large bowl, mix mashed potatoes, egg, cheddar, Parmesan, green onions, garlic powder, salt, and pepper.
3. Add flour and stir until mixture holds together but is not too dry.
4. Scoop about 1 tablespoon of mixture into each muffin cup and press down lightly.
5. Bake for 20–25 minutes or until tops are golden and edges are crisp.
6. Let cool for 5 minutes before removing from tin. Serve warm with sour cream or dipping sauce.
Notes
• Use different cheeses like mozzarella or pepper jack for a flavor twist.
• These freeze well! Reheat in the oven or air fryer to crisp up.
• Add crumbled bacon for an extra savory version.
