Ingredients
2 cups fresh spinach, chopped (or 1 cup cooked frozen, squeezed dry)
1/2 cup crumbled feta cheese
1/4 cup grated Parmesan cheese
1 egg, beaten
1/3 cup breadcrumbs (plus extra for coating)
1 clove garlic, minced
1 tbsp fresh dill or parsley, chopped
Salt and pepper to taste
Olive oil spray or brushing for baking
Instructions
1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
2. In a mixing bowl, combine spinach, feta, Parmesan, egg, breadcrumbs, garlic, herbs, salt, and pepper.
3. Form into small bite-sized balls or patties and roll lightly in extra breadcrumbs for crunch.
4. Place bites on the prepared sheet and spray or brush lightly with olive oil.
5. Bake for 15–18 minutes, flipping halfway, until golden and crisp.
6. Let cool slightly and serve with tzatziki or your favorite dip.
Notes
You can air fry these at 375°F for 10–12 minutes.
To freeze: shape, place on tray to flash freeze, then store in a freezer bag. Bake from frozen as needed.
Add red pepper flakes for a spicy version.
