Ingredients
For the Casserole:
2 cups cooked rice
2 cups cooked chicken (shredded or diced)
1 cup black beans (drained and rinsed)
1/2 cup corn
1 cup salsa
1 cup shredded cheddar or Mexican blend cheese
1/2 cup chicken broth
1 teaspoon cumin
1 teaspoon paprika
Salt and pepper to taste
Optional:
Chopped cilantro
Sour cream
Jalapeños
Instructions
1. Preheat oven to 180°C (350°F).
2. In a large bowl, combine rice, chicken, black beans, corn, salsa, chicken broth, and spices.
3. Mix everything well.
4. Transfer mixture to a baking dish.
5. Top with shredded cheese.
6. Bake for 20–25 minutes until hot and bubbly.
7. Let cool slightly, then garnish with cilantro or jalapeños.
8. Serve warm with sour cream if desired.
Notes
Use rotisserie chicken for convenience.
Add extra cheese for a richer version.
Adjust spice level with chili or jalapeños.
