Ingredients
For the dough:
4 cups all-purpose flour
1 tsp baking powder
1/2 tsp salt
1 cup cold butter or margarine, cubed
1/2 cup cold water (as needed)
For the filling:
1 lb ground beef
1 tbsp vegetable oil
1 small onion, finely diced
2 medium potatoes, diced small
1 medium carrot, diced small
1 tsp curry powder
1/2 tsp thyme
1/2 tsp black pepper
1/2 tsp salt
1/2 cup beef stock
For brushing:
1 egg, beaten
Instructions
1. Preheat oven to 350°F (175°C).
2. In a bowl, mix flour, baking powder, and salt. Rub in butter until crumbly.
3. Add cold water gradually and mix to form a firm dough. Wrap and refrigerate for 20 minutes.
4. Heat oil in a skillet over medium heat and sauté onion until soft.
5. Add ground beef and cook until browned.
6. Stir in potatoes, carrots, curry powder, thyme, pepper, salt, and beef stock.
7. Cook until vegetables are tender and filling is thick. Let cool completely.
8. Roll out dough and cut into circles.
9. Spoon filling onto one side, fold over, and seal edges with a fork.
10. Brush with beaten egg and bake for 30–35 minutes until golden.
Notes
• Filling must be cool before assembling to avoid soggy dough.
• Dice vegetables very small for even cooking.
• Can be frozen before baking.
