Ingredients
For the Crust:
2 cups chocolate cookie crumbs (like Oreos, no filling)
5 tbsp melted butter
For the Cheesecake Filling:
16 oz cream cheese, softened
1/2 cup powdered sugar
1 tsp vanilla extract
1 1/2 cups semisweet chocolate chips, melted and cooled
1 1/2 cups whipped topping (like Cool Whip), thawed
For the Coconut-Pecan Topping:
1/2 cup evaporated milk
1/2 cup brown sugar
2 large egg yolks
1/4 cup unsalted butter
2/3 cup shredded sweetened coconut
1/2 cup chopped pecans
1/2 tsp vanilla extract
Instructions
1. In a bowl, mix cookie crumbs and melted butter until combined. Press into the bottom of a 9-inch springform pan. Chill in freezer while making the filling.
2. In a large bowl, beat cream cheese, powdered sugar, and vanilla until smooth.
3. Add melted chocolate and beat until combined. Fold in whipped topping.
4. Spread chocolate cheesecake filling over crust and smooth top. Refrigerate at least 4 hours or overnight.
5. For topping, in a saucepan over medium heat, whisk evaporated milk, brown sugar, egg yolks, and butter until thickened (about 10 minutes).
6. Remove from heat. Stir in coconut, pecans, and vanilla. Let cool completely.
7. Spread topping over chilled cheesecake. Chill again until ready to serve.

• Use store-bought coconut-pecan frosting for a shortcut.
• Keep refrigerated until ready to slice and serve.
• For extra flair, drizzle with chocolate ganache before serving.
