Ingredients
4 boneless, skinless chicken breasts or thighs
2 tablespoons olive oil
1 teaspoon salt
½ teaspoon black pepper
1 teaspoon Italian seasoning
3 cloves garlic, minced
⅓ cup balsamic vinegar
2 tablespoons honey or brown sugar
½ cup chicken broth
1 cup cherry tomatoes
1 cup green beans or asparagus
Optional garnish: fresh basil or parsley
Instructions
1. Season chicken on both sides with salt, pepper, and Italian seasoning.
2. Heat olive oil in a large skillet over medium-high heat.
3. Add chicken and sear for 4–5 minutes per side until golden. Remove and set aside.
4. Reduce heat to medium and add garlic to the pan, sautéing for 30 seconds.
5. Pour in balsamic vinegar, honey, and chicken broth, stirring to combine.
6. Add tomatoes and green beans to the skillet.
7. Return chicken to the pan and spoon sauce over the top.
8. Cover and simmer for 12–15 minutes until chicken is cooked through and sauce thickens slightly.
9. Garnish with fresh herbs and serve warm.
Notes
Chicken thighs stay extra juicy, but breasts work just as well.
If sauce becomes too thick, add a splash of chicken broth.
This dish pairs beautifully with rice, mashed potatoes, or crusty bread.
