Ingredients
1 tbsp olive oil
14 oz smoked sausage (andouille or kielbasa), sliced
1/2 onion, diced
1/2 green bell pepper, diced
2 cloves garlic, minced
1 tsp Cajun seasoning (plus more to taste)
1 tbsp tomato paste
1 tbsp soy sauce or coconut aminos
2 tbsp honey
1 tbsp apple cider vinegar
1 cup long grain white rice
2 1/4 cups chicken broth (low sodium)
Salt and black pepper to taste
2 green onions, sliced (for garnish)
Instructions
1. Heat olive oil in a large skillet over medium heat. Add sliced sausage and cook until browned, about 3–4 minutes.
2. Add onion and bell pepper. Sauté until soft, about 4 minutes.
3. Stir in garlic and Cajun seasoning. Cook for 1 minute until fragrant.
4. Add tomato paste, soy sauce, honey, and apple cider vinegar. Stir to coat the sausage and veggies evenly.
5. Add uncooked rice and stir to combine.
6. Pour in chicken broth and bring to a boil. Reduce heat to low, cover, and simmer for 18–20 minutes, or until rice is tender and liquid is absorbed.
7. Remove lid, fluff rice, and adjust seasoning with salt and pepper if needed.
8. Garnish with green onions and serve hot!
Notes
Make it spicier by adding cayenne or hot sauce.
Use brown rice if preferred, but adjust liquid and cook time.
Leftovers reheat beautifully for meal prep or next-day lunches.
