Ingredients
1 tbsp olive oil or butter
3 cloves garlic, minced
1 cup long grain white rice
2 cups low-sodium chicken or vegetable broth
1/2 tsp salt (or to taste)
1/4 tsp black pepper
1/3 cup grated Parmesan cheese
1 tbsp chopped parsley (optional for garnish)
Instructions
1. Heat olive oil or butter in a medium saucepan over medium heat. Add minced garlic and sauté for 30–60 seconds until fragrant.
2. Add rice and stir for 1–2 minutes to lightly toast.
3. Pour in broth, add salt and pepper. Bring to a boil.
4. Reduce heat to low, cover, and simmer for 15–17 minutes, or until rice is tender and liquid is absorbed.
5. Remove from heat. Fluff with a fork, then stir in Parmesan cheese.
6. Garnish with parsley if desired, and serve warm.
Notes
• For a creamy twist, stir in 1 tbsp cream cheese or 2 tbsp heavy cream at the end.
• Brown rice can be used—just adjust cook time per package directions.
• Great with lemon zest for added brightness.
