Ingredients
2 tablespoons butter
1 small onion (chopped)
2 cloves garlic (minced)

4 cups beef broth
1 cup heavy cream
2 cups cooked corned beef (chopped)
1 cup sauerkraut (drained and rinsed)
1 cup shredded Swiss cheese
1 teaspoon Dijon mustard
1/2 teaspoon caraway seeds (optional)
Salt and black pepper to taste

Instructions
1. Melt butter in a large pot over medium heat
2. Add chopped onion and cook until softened, about 4–5 minutes
3. Stir in garlic and cook for 1 minute until fragrant
4. Sprinkle in flour and cook for 1–2 minutes, stirring constantly
5. Gradually whisk in beef broth until smooth
6. Add heavy cream and bring to a gentle simmer

Notes
