Ingredients
1 lb shelf-stable potato gnocchi
2 cups broccoli florets
1 red bell pepper, sliced
1 zucchini, sliced
1 small red onion, sliced
3 tbsp olive oil
1 tsp garlic powder
1 tsp Italian seasoning
Salt and black pepper, to taste
For the cottage cheese sauce:
1 cup cottage cheese
2 tbsp milk
1 tbsp lemon juice
1 clove garlic
Optional toppings:
Grated parmesan
Red pepper flakes
Fresh basil or parsley
Instructions
1. Preheat oven to 425°F (220°C) and line a large sheet pan with parchment paper.
2. Add gnocchi and vegetables to the pan.
3. Drizzle with olive oil and season with garlic powder, Italian seasoning, salt, and pepper.
4. Toss well and spread in an even layer.
5. Roast for 25–30 minutes, stirring halfway, until gnocchi are golden and vegetables are tender.
6. Meanwhile, blend cottage cheese, milk, lemon juice, and garlic until smooth and creamy.
7. Remove sheet pan from oven and drizzle cottage cheese sauce over gnocchi and vegetables.
8. Toss gently to coat.
9. Top with parmesan or herbs if desired and serve warm.
Notes
• Don’t overcrowd the pan for crispier gnocchi.
• Swap veggies based on season or preference.
• Add cooked chicken or chickpeas for extra protein.
