Ingredients
For the Korean BBQ beef:
1½ lbs flank steak or sirloin, thinly sliced
2 tbsp olive oil
For the sauce:
1/4 cup soy sauce or tamari
2 tbsp brown sugar or honey
1 tbsp rice vinegar
1 tbsp sesame oil
3 cloves garlic, minced
1 tbsp fresh ginger, grated
For the bok choy:
3–4 heads baby bok choy, halved
1 tbsp olive oil
Salt and black pepper, to taste
Optional garnish:
Sliced green onions
Sesame seeds
Red pepper flakes
Instructions
1. Preheat oven to 425°F (220°C) and line a large sheet pan with parchment paper.
2. In a bowl, whisk soy sauce, brown sugar, rice vinegar, sesame oil, garlic, and ginger.
3. Toss sliced beef with olive oil and half of the sauce.
4. Spread beef evenly on one side of the sheet pan.
5. Toss bok choy with olive oil, salt, and pepper and place on the other side of the pan.
6. Roast for 12–15 minutes, stirring once, until beef is caramelized and bok choy is tender.
7. Remove from oven and drizzle remaining sauce over beef.
8. Garnish with green onions, sesame seeds, or red pepper flakes.
9. Serve hot.
Notes
• Slice beef thinly against the grain for tenderness.
• Add bell peppers or snap peas for extra veggies.
• Delicious served over rice or cauliflower rice.
