Ingredients
FOR THE MEATLOAF:
1 lb ground beef
1 small onion, finely diced
1 large egg
½ cup breadcrumbs (or GF breadcrumbs)
¼ cup ketchup
1 tbsp Worcestershire sauce
1 tsp garlic powder
1 tsp onion powder
½ tsp paprika
Salt and pepper to taste
FOR THE VEGETABLES:
3 cups baby potatoes, halved
2 cups green beans, trimmed
2 tbsp olive oil
½ tsp garlic powder
½ tsp paprika
Salt and pepper to taste
FOR THE GLAZE:
¼ cup ketchup
1 tbsp brown sugar
1 tsp Dijon mustard
Instructions
1. Preheat oven to 400°F (200°C). Line a sheet pan with parchment.
2. In a bowl, mix ground beef, onion, egg, breadcrumbs, ketchup, Worcestershire sauce, garlic powder, onion powder, paprika, salt, and pepper.
3. Form mixture into a loaf in the center of the sheet pan.
4. In a separate bowl, toss potatoes with olive oil, garlic powder, paprika, salt, and pepper. Arrange on one side of the sheet pan.
5. Toss green beans with a little olive oil, salt, and pepper. Place on the other side of the sheet pan.
6. Stir together ketchup, brown sugar, and Dijon mustard for the glaze. Spread over the meatloaf.
7. Bake 30–40 minutes, or until meatloaf is cooked through and potatoes are tender.
8. Broil for 2 minutes for caramelization if desired.
9. Let rest 5 minutes before slicing and serving.
Notes
Use GF breadcrumbs for a gluten-free version.
Add Parmesan to the meatloaf mixture for extra flavor.
Swap veggies — carrots, broccoli, or Brussels sprouts work great.
Double the glaze if you love extra sauciness.
