Ingredients
1 lb large shrimp, peeled and deveined
1 cup orzo pasta
2 tbsp olive oil
3 tbsp butter, divided
4 cloves garlic, minced
Zest and juice of 1 lemon
1/2 tsp red pepper flakes (optional)
1/2 cup grated Parmesan cheese
1/4 cup chopped parsley
Salt and pepper to taste
Instructions
1. Cook orzo according to package directions in salted water. Drain and set aside.
2. In a large skillet, heat 1 tbsp olive oil and 1 tbsp butter over medium-high heat.
3. Add shrimp, season with salt and pepper, and sauté 2–3 minutes per side until pink and cooked through. Remove and set aside.
4. In the same skillet, add remaining butter and garlic. Sauté for 30 seconds until fragrant.
5. Add lemon zest, lemon juice, red pepper flakes (if using), and cooked orzo. Toss to coat.
6. Stir in Parmesan cheese and parsley. Adjust seasoning if needed.
7. Add shrimp back to skillet and toss to combine. Serve warm with extra lemon wedges.
Notes
Use chicken or tofu instead of shrimp for variation.
Great served with a side of sautéed greens or crusty bread.
