Ingredients
1 pound pecan halves
1 cup granulated sugar
1 cup brown sugar
2 teaspoons cinnamon
1/2 teaspoon salt
1 egg white
1 tablespoon vanilla extract
1/4 cup water
Instructions
1. Spray the slow cooker with nonstick spray or lightly grease it.
2. In a bowl, whisk the egg white and vanilla until frothy.
3. Add pecans and coat evenly.
4. In another bowl, mix granulated sugar, brown sugar, cinnamon, and salt.
5. Pour sugar mixture over coated pecans and toss until fully covered.
6. Place pecans into the slow cooker and spread them out.
7. Cook on LOW for 3 hours, stirring every 30–45 minutes to prevent burning.
8. During the last 30 minutes, stir in the water to help form a glossy candy coating.
9. Spread pecans onto parchment paper to cool completely.
10. Once hardened, break apart and store in an airtight container.
Notes
Add a pinch of cayenne for a spicy-sweet twist.
