Ingredients
4 boneless, skinless chicken breasts
1 (10.5 oz) can cream of chicken soup
1/2 cup sour cream
1/2 cup chicken broth
1/2 tsp garlic powder
1/2 tsp onion powder
Salt and pepper to taste
1 (6 oz) box stuffing mix
2 cups frozen mixed vegetables (optional)
1 tbsp butter (optional)
Instructions
1. Spray the inside of your slow cooker with nonstick spray or lightly grease it.
2. In a medium bowl, whisk together cream of chicken soup, sour cream, broth, garlic powder, onion powder, salt, and pepper.
3. Spread stuffing mix evenly in the bottom of the slow cooker.
4. Add frozen vegetables (if using) over the stuffing.
5. Place chicken breasts on top. Pour the soup mixture over everything and spread evenly.
6. Dot the top with butter if desired.
7. Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours, until chicken is tender and cooked through.
8. Stir lightly before serving, or serve the chicken whole with stuffing scooped alongside.
Notes
Use rotisserie chicken and reduce cook time to 2–3 hours on LOW.
Add shredded cheddar or Swiss cheese before serving for a cheesy twist.
Great with a side of cranberry sauce or green beans.
