Ingredients
2½ lbs beef chuck, cut into cubes
2 tbsp olive oil
1 large onion, diced
3 cloves garlic, minced
3 tbsp Hungarian sweet paprika
1 tsp smoked paprika
1/2 tsp caraway seeds (optional)
Salt and black pepper, to taste
Vegetables & broth:
3 cups potatoes, diced
2 cups beef broth
1 (14 oz) can diced tomatoes
Optional garnish:
Fresh parsley
Sour cream
Instructions
1. Season beef with salt and black pepper.
2. Heat olive oil in a skillet over medium-high heat and brown beef on all sides.
3. Transfer beef to the slow cooker.
4. Add onion, garlic, Hungarian paprika, smoked paprika, and caraway seeds.
5. Stir in potatoes, diced tomatoes, and beef broth.
6. Cover and cook on LOW for 7–8 hours or HIGH for 4–5 hours until beef is tender.
7. Taste and adjust seasoning as needed.
8. Serve hot, garnished with parsley or a dollop of sour cream.
Notes
• Use authentic Hungarian paprika for best flavor.
• Goulash thickens naturally as it cooks.
• Even better the next day after flavors deepen.
