Ingredients
1 cup dried brown or green lentils, rinsed
12 oz mushrooms, finely chopped
1 small onion, diced
2 carrots, finely diced
2 celery stalks, finely diced
4 cloves garlic, minced
1 (28 oz) can crushed tomatoes
2 tbsp tomato paste
3 cups vegetable broth
1 tbsp olive oil
1 tsp dried oregano
1 tsp dried basil
1/2 tsp smoked paprika
Salt and black pepper, to taste
Optional add-ins:
1/4 tsp red pepper flakes
1 tbsp balsamic vinegar
For serving:
Cooked pasta
Fresh basil or parsley
Grated parmesan or vegan parmesan
Instructions
1. Add lentils, mushrooms, onion, carrots, celery, garlic, crushed tomatoes, tomato paste, vegetable broth, olive oil, oregano, basil, smoked paprika, salt, and pepper to the slow cooker.
2. Stir well to combine.
3. Cover and cook on LOW for 7–8 hours or HIGH for 4–5 hours until lentils are tender.
4. Stir in balsamic vinegar or red pepper flakes if using.
5. Taste and adjust seasoning.
6. Serve hot over cooked pasta and garnish as desired.
Notes
• Finely chopped mushrooms create a meaty texture.
• Sauce thickens as it cools—add broth if needed.
