Ingredients
3 lbs chuck roast
Salt and black pepper, to taste
1 tbsp olive oil
For the gravy:
1 large onion, sliced
12 oz mushrooms, sliced
3 cloves garlic, minced
2 cups beef broth
2 tbsp Worcestershire sauce
1 tbsp soy sauce
1 tsp dried thyme
1 tsp dried rosemary
Optional thickener:
2 tbsp cornstarch + 2 tbsp water
Optional garnish:
Fresh parsley
Instructions
1. Season roast generously with salt and pepper.
2. Heat olive oil in a skillet over medium-high heat and sear roast on all sides until browned.
3. Place sliced onions and mushrooms in the bottom of the slow cooker.
4. Add garlic, beef broth, Worcestershire sauce, soy sauce, thyme, and rosemary.
5. Place seared roast on top of the vegetables.
6. Cover and cook on LOW for 8–9 hours or HIGH for 4–5 hours until fork-tender.
7. Optional: Remove roast and whisk cornstarch slurry into gravy; cook 10–15 minutes until thickened.
8. Slice or shred beef and return to gravy.
9. Garnish with parsley and serve hot.
Notes
• Chuck roast gives the most tender results.
• Slice beef against the grain for best texture.
• Perfect with mashed potatoes, rice, or egg noodles.
