Ingredients
½ cup unsalted butter, melted
½ cup creamy peanut butter
½ cup granulated sugar
½ cup brown sugar
2 large eggs
1 tbsp vanilla extract
1½ cups all-purpose or gluten-free 1:1 flour
½ tsp baking powder
¼ tsp salt
1 cup chocolate chips (plus extra for topping)
Cooking spray or parchment for slow cooker
Instructions
1. Line slow cooker with parchment paper or spray well.
2. In a large bowl, mix melted butter, peanut butter, sugar, brown sugar, eggs, and vanilla until smooth.
3. Stir in flour, baking powder, and salt just until combined.
4. Fold in chocolate chips.
5. Spread dough evenly into the slow cooker.
6. Top with extra chocolate chips for extra meltiness.
7. Cover and cook on LOW for 2–3 hours, until edges are set but center is still soft.
8. Turn off heat and let cool 10–15 minutes before lifting out and slicing into bars.
Notes
For thicker bars, use a smaller slow cooker.
Add chopped peanuts or peanut butter chips for extra texture.
Serve warm with vanilla ice cream — incredible!
Bars firm up as they cool; undercook slightly for maximum gooeyness.
