Ingredients
• For the crust:
1 1/2 cups cinnamon graham cracker crumbs
1/4 cup sugar
1/2 tsp ground cinnamon
6 tbsp butter, melted
• For the cheesecake filling:
24 oz cream cheese, softened
3/4 cup granulated sugar
3 large eggs
1/2 cup sour cream
1 tbsp vanilla extract
1 tsp ground cinnamon
• For the topping:
2 tbsp sugar + 1 tsp ground cinnamon (mixed for sprinkle)
Instructions
1. Preheat oven to 325°F. Grease a 9-inch springform pan.
2. Mix graham cracker crumbs, sugar, cinnamon, and melted butter. Press into bottom of pan. Bake 8–10 minutes. Let cool.
3. In a large bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, mixing after each. Blend in sour cream, vanilla, and cinnamon until smooth.
4. Pour filling over crust. Tap to release air bubbles.
5. Sprinkle cinnamon-sugar topping evenly over the batter.
6. Bake for 50–60 minutes or until center is set but slightly jiggly.
7. Turn off oven, crack door, and cool inside for 1 hour.
8. Chill in fridge at least 4 hours or overnight before slicing.
9. Serve chilled with whipped cream, caramel drizzle, or a dusting of cinnamon.

• Use a water bath for extra creamy texture and no cracks.
• Make it ahead—this cheesecake tastes even better the next day.
• Add a snickerdoodle cookie crust for double the cookie flavor.
