Ingredients
4 cups collard greens, stems removed and chopped
4 medium potatoes, peeled and diced
1 small onion, diced
3 cloves garlic, minced
1 tbsp olive oil
1/2 tsp smoked paprika
1/2 tsp black pepper
1/2 tsp red pepper flakes (optional)
5 cups vegetable or chicken broth
Salt, to taste
Instructions
1. Heat olive oil in a large pot over medium heat.
2. Add onion and cook until softened.
3. Stir in garlic, smoked paprika, black pepper, and red pepper flakes.
4. Add potatoes and collard greens to the pot.
5. Pour in broth and bring to a boil.
6. Reduce heat, cover, and simmer for 30–35 minutes until potatoes are tender.
7. Taste and season with salt as needed.
8. Serve hot.
Notes
• Add smoked turkey or ham for extra Southern flavor.
• Serve with cornbread or biscuits.
• Stew thickens as it rests.
