Ingredients
300 g spaghetti
400 g sea scallops, patted dry
2 tbsp olive oil
3 cloves garlic, minced
1/2 tsp red chili flakes (adjust to taste)
1/2 tsp paprika
Salt and black pepper, to taste
1/4 cup pasta cooking water
Fresh parsley or basil, chopped
Lemon wedges (optional)
Instructions
1. Cook spaghetti according to package instructions until al dente. Reserve 1/4 cup pasta water.
2. Season scallops with salt, pepper, and paprika.
3. Heat olive oil in a large skillet over medium-high heat.
4. Sear scallops for 2–3 minutes per side until golden. Remove and set aside.
5. In the same skillet, reduce heat and add garlic and chili flakes.
6. Cook briefly until fragrant, then add reserved pasta water.
7. Add cooked spaghetti and toss to coat.
8. Return scallops to the pan and gently toss.
9. Finish with fresh herbs and serve with lemon wedges if desired.
Notes
• Do not overcrowd the pan when searing scallops.
• Add white wine for extra depth of flavor.
• Best served immediately.
