Ingredients
For the Casserole:
2 cups fresh spinach (or frozen, thawed and drained)
1 cup artichoke hearts, chopped
1 cup cherry tomatoes, halved
1/2 cup cream cheese, softened
1/2 cup Greek yogurt or sour cream
1 cup shredded mozzarella cheese
1/4 cup grated Parmesan cheese
2 cloves garlic, minced
1/2 teaspoon Italian seasoning
Salt and black pepper to taste
Optional:
Breadcrumbs for topping
Fresh basil or parsley
Instructions
1. Preheat oven to 180°C (350°F) and grease a baking dish.
2. In a bowl, combine spinach, artichokes, and tomatoes.
3. Add cream cheese, yogurt (or sour cream), mozzarella, Parmesan, garlic, seasoning, salt, and pepper.
4. Mix until well combined.
5. Transfer mixture to the baking dish and spread evenly.
6. Sprinkle breadcrumbs on top if desired.
7. Bake for 25–30 minutes until hot and bubbly.
8. Let cool slightly before serving.
9. Garnish with fresh herbs and serve.
Notes
Drain spinach well to avoid excess moisture.
Add grilled chicken for extra protein.
Use low-fat dairy for a lighter version.
Serve with bread, rice, or as a side.
