Ingredients
1 sheet puff pastry, thawed
1 tbsp olive oil
2 cups fresh spinach, chopped
2 cloves garlic, minced
1/2 cup crumbled feta cheese
1 egg (for filling)
1 egg (for egg wash)
Salt and pepper to taste
Optional: sesame seeds or everything bagel seasoning for topping
Instructions
1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
2. Heat olive oil in a skillet over medium heat. Add garlic and sauté for 30 seconds.
3. Add chopped spinach and cook until wilted, about 2–3 minutes. Season with salt and pepper.
4. Remove from heat and let cool slightly. In a bowl, mix spinach, feta, and 1 egg until combined.
5. Roll out puff pastry on a lightly floured surface. Cut into 6 or 9 equal squares.
6. Place a spoonful of filling in the center of each square. Fold into triangles or rectangles and press edges to seal.
7. Place pastries on baking sheet. Beat remaining egg and brush over tops. Sprinkle with optional toppings.
8. Bake for 18–22 minutes until golden and puffed. Let cool slightly and serve warm.
Notes
Use frozen spinach (thawed and squeezed dry) if preferred.
Add a pinch of nutmeg or dill to enhance flavor.
Serve with tzatziki or marinara for dipping.
