Ingredients
12 oz spaghetti
2 tbsp olive oil
4 cloves garlic, minced
8 oz mushrooms, sliced
Salt and black pepper, to taste
1/4 tsp red pepper flakes (optional)
3 cups fresh spinach
1/4 cup grated parmesan cheese
Optional add-ins:
Cherry tomatoes
Lemon zest or juice
Fresh parsley or basil
Instructions
1. Cook spaghetti according to package directions; reserve 1/2 cup pasta water and drain.
2. Heat olive oil in a large skillet over medium heat.
3. Add garlic and sauté until fragrant.
4. Add mushrooms and cook until browned and tender.
5. Season with salt, pepper, and red pepper flakes if using.
6. Stir in spinach and cook until just wilted.
7. Add cooked spaghetti to the skillet.
8. Toss to combine, adding pasta water as needed for a silky sauce.
9. Remove from heat and sprinkle with parmesan cheese.
10. Add optional toppings and serve warm.
Notes
• Don’t overcrowd mushrooms—let them brown.
• Add lemon juice for extra brightness.
• Great with whole-wheat or gluten-free pasta.
