Ingredients
**For the Filling:**
4 oz cream cheese, softened
2 tbsp powdered sugar
1/2 tsp vanilla extract
1/2 cup diced fresh strawberries
**For the French Toast:**
4 thick slices brioche or challah bread
2 large eggs
1/3 cup milk
1/2 tsp cinnamon
1/2 tsp vanilla extract
Butter or oil for frying
**Optional Toppings:**
Powdered sugar
Maple syrup
Extra strawberries
Instructions
1. In a small bowl, mix cream cheese, powdered sugar, and vanilla until smooth. Gently fold in diced strawberries.
2. Cut a slit into the center of each bread slice to create a pocket (don’t cut all the way through).
3. Spoon the cheesecake mixture into each pocket evenly.
4. In a shallow bowl, whisk eggs, milk, cinnamon, and vanilla.
5. Dip each stuffed slice in the egg mixture, coating both sides well.
6. Heat butter or oil in a skillet over medium heat.
7. Cook each slice 2–3 minutes per side until golden brown and cooked through.
8. Serve warm with maple syrup, powdered sugar, and extra strawberries.
Notes
Use day-old bread for best results—it holds its shape better when stuffed.
You can prep the filling a day ahead and store it in the fridge.
Make it extra indulgent with a dollop of whipped cream on top.
