Ingredients
1 lb ground beef (or ground turkey)
1 small onion, diced
2 cloves garlic, minced
1 (15 oz) can black beans, drained and rinsed
1 (15 oz) can kidney beans, drained and rinsed
1 (15 oz) can corn, drained
1 (15 oz) can diced tomatoes
1 (10 oz) can diced tomatoes with green chilies (Rotel)
1 packet taco seasoning (or 2 tbsp homemade)
2 cups beef broth or chicken broth
Optional toppings: shredded cheese, sour cream, tortilla chips, jalapeños, avocado
Instructions
1. In a large pot or Dutch oven, cook ground beef and diced onion over medium heat until browned. Drain excess fat.
2. Add minced garlic and cook for 1 more minute until fragrant.
3. Stir in black beans, kidney beans, corn, diced tomatoes, Rotel, taco seasoning, and broth.
4. Bring soup to a boil, then reduce heat and simmer for 15–20 minutes to allow flavors to blend.
5. Taste and adjust seasoning if needed.
6. Ladle into bowls and top with cheese, sour cream, and crushed tortilla chips.
7. Serve hot and enjoy!
Notes
• For a spicier version, use hot Rotel or add chili powder.
• Make it creamy by stirring in 1/2 cup of sour cream or cream cheese.
• This soup freezes well—store in portions for up to 3 months.
