Ingredients
4 boneless, skinless chicken breasts
1 tbsp olive oil
1 tbsp butter
1 small onion, thinly sliced
1 cup sliced mushrooms
1 tsp garlic powder
1 tsp paprika
Salt and pepper, to taste
1 cup shredded Monterey Jack cheese (or Colby Jack)
Chopped parsley, for garnish (optional)
Instructions
1. Pound chicken breasts to even thickness if needed. Season both sides with salt, pepper, garlic powder, and paprika.
2. Heat olive oil in a large skillet over medium heat. Add chicken and cook for 5–6 minutes per side, or until fully cooked and golden. Remove and set aside.
3. In the same skillet, melt butter. Add sliced onions and mushrooms. Cook for 8–10 minutes, stirring occasionally, until soft and caramelized.
4. Return chicken to skillet. Top each piece with sautéed mushrooms and onions, then sprinkle shredded cheese over each.
5. Cover skillet with a lid or foil and let cheese melt (2–3 minutes).
6. Garnish with chopped parsley if desired. Serve hot with mashed potatoes or green beans.
Notes
• Add a splash of Worcestershire sauce or balsamic vinegar to the onions for deeper flavor.
• Use provolone or mozzarella for a milder cheese option.
• Great with mashed potatoes, sautéed veggies, or buttered noodles.
