Ingredients

For the Noodles:

200 g rice noodles

200 g shrimp (peeled and deveined)

2 eggs

2 tablespoons oil

For the Sauce:

3 tablespoons tamarind paste

2 tablespoons fish sauce

1 tablespoon sugar

1 tablespoon soy sauce

For the Mix-Ins:

2 cloves garlic (minced)

2 green onions (chopped)

1/4 cup crushed peanuts

Optional:

Bean sprouts

Lime wedges

Chili flakes

Instructions

1. Soak rice noodles in warm water until softened.

2. Heat oil in a pan and sauté garlic for 1 minute.

3. Add shrimp and cook until pink.

4. Push to one side and scramble eggs in the pan.

5. Add noodles and pour in the sauce.

6. Toss everything together until well coated.

7. Add green onions and peanuts.

8. Cook for another 2–3 minutes.

9. Serve with bean sprouts, lime, and chili flakes.

Notes

Do not overcook noodles.

Adjust tamarind and sugar for balance.

Use high heat for best texture.

Serve immediately for best flavor.
